smooth cooktops are in. Flat, smooth cooktops and ranges make up 30% of the cooking appliances sold in the United States today. The best are made from a special ceramic-glass formula that resists heat, cold and impact. They are gaining popularity because they clean quickly and easily, just wipe them clean, and for more stubborn bits use a razor scraper. Historically, professional cooks preferred gas ranges because gas heat is infinitely variable, quick to respond to changes and available in higher Btu ratings for commercial cooking. Quartz halogen elements and magnetic induction elements are newer cooktop designs that equal gas cooking and are suitable for home use. Both magnetic induction and quartz halogen elements or " burners " are available in easy cleaning flat cooktops. Flat smooth cooktops and ranges are also available with radiant heat elements very similar to the standard electric range and cooktop. These radiant cooktops are easy to clean but respond more slowly, similar to standard electric elements. For efficient heat transfer on any of these cooktops and ranges the bottom of the pots and pans must be absolutely flat. If you use pans that are warped you waste energy, cook unevenly and prematurely age your cooktop. Most cookware has slightly rounded bottoms. They usually become rounded because of poor design, as the cookware ages the bottom starts to round from repeated reheatings. Look cookware is engineered and guaranteed to stay flat for twenty-five years. Look nonstick cookware also gets you out of the kitchen quicker.
